Brinjal Garlic Thokku

Ingredients:

Garlic-10 to 15 cloves chopped
Brinjal-2 big cubed
Onion-1 big chopped
Tomato-1 chopped
Chilli powder-1 tbsp(depends on your taste)
Turmeric powder-a pinch
Salt to taste

to temper:

mustard seeds and curry leaves

Method:

  1. Heat oil in a pan and add the tempering items.Then add the chopped garlic cloves and fry for 2 mins.Wait till it becomes light brown color.
  2. Then add the chopped onion and saute till it becomes transparent.Then add the chopped tomatoes and brinjal and fry for a min,
  3. Then add the masala powders and a cup of water and cook it covered.Add salt to taste.Wait till all the water drains off.Yummy thokku is ready :)
